How To Make Pulled Chicken Salad

Ingredients
- 2 chicken breasts
- 1 tsp olive oil
- 1 tbsp barbecue sauce
- 4 cups mixed greens
- 1 cup cherry tomatoes, halved
- 1/2 cup sliced red onions
- 1/4 cup chopped cilantro
- 1/4 cup crumbled feta cheese
- 1/4 cup sliced almonds
- Salt and pepper, to taste
- dressing:
- 2 tbsp Greek yogurt
- 1 tbsp lemon juice
- 1 tbsp honey
- 1 clove garlic, minced
- Salt and pepper, to taste
Instructions

Preheat the oven to 375°F (190°C). Season the chicken breasts with salt and pepper.

Heat olive oil in a skillet over medium heat. Add the chicken breasts and cook for 6-8 minutes on each side, until cooked through.

Remove the chicken from the skillet and let it cool for a few minutes. Using two forks, shred the chicken into small pieces.

In a bowl, mix the shredded chicken with barbecue sauce until well coated.

In a separate large bowl, combine the mixed greens, cherry tomatoes, red onions, cilantro, feta cheese, and sliced almonds.

In a small bowl, whisk together the Greek yogurt, lemon juice, honey, minced garlic, salt, and pepper to make the dressing.

Add the shredded chicken to the bowl with the salad ingredients. Drizzle the dressing over the salad and toss until everything is well coated.

Serve the pulled chicken salad immediately and enjoy!
