How To Make Lebanese Chicken Rice Recipe
A flavorful rice dish with tender marinated chicken, fragrant spices, toasted nuts, and fresh herbs.

Ingredients
- 1 lb chicken breast, cut into bite-sized pieces
- 1 cup basmati rice
- 2 cups chicken broth
- 1/2 cup chopped onion
- 2 cloves garlic, minced
- 1 tsp cumin
- 1 tsp paprika
- 1/4 tsp cinnamon
- 1/4 tsp allspice
- 1/4 tsp cayenne pepper
- 1/2 cup toasted pine nuts
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh mint
- Salt and pepper to taste
- Olive oil
Instructions

In a bowl, mix together the chicken, onion, garlic, cumin, paprika, cinnamon, allspice, cayenne, and a pinch of salt and pepper. Cover and refrigerate for at least 30 minutes to marinate.

Rinse the rice under cold water until the water runs clear. In a pot, bring the chicken broth to a boil and add the rice. Reduce the heat to low, cover, and simmer for 18-20 minutes until the rice is cooked and the liquid is absorbed.

Heat some olive oil in a large skillet over medium-high heat. Add the chicken and cook for 5-7 minutes until browned and cooked through.

Once the rice is cooked, fluff it with a fork and add in the pine nuts, parsley, mint, and a drizzle of olive oil. Season with salt and pepper to taste.

Serve the chicken on top of the rice and garnish with extra herbs and nuts if desired.
