How To Make Lebanese Chicken Rice Recipe

Ingredients

  • 1 lb chicken breast, cut into bite-sized pieces
  • 1 cup basmati rice
  • 2 cups chicken broth
  • 1/2 cup chopped onion
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp paprika
  • 1/4 tsp cinnamon
  • 1/4 tsp allspice
  • 1/4 tsp cayenne pepper
  • 1/2 cup toasted pine nuts
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh mint
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. In a bowl, mix together the chicken, onion, garlic, cumin, paprika, cinnamon, allspice, cayenne, and a pinch of salt and pepper. Cover and refrigerate for at least 30 minutes to marinate.

  2. Rinse the rice under cold water until the water runs clear. In a pot, bring the chicken broth to a boil and add the rice. Reduce the heat to low, cover, and simmer for 18-20 minutes until the rice is cooked and the liquid is absorbed.

  3. Heat some olive oil in a large skillet over medium-high heat. Add the chicken and cook for 5-7 minutes until browned and cooked through.

  4. Once the rice is cooked, fluff it with a fork and add in the pine nuts, parsley, mint, and a drizzle of olive oil. Season with salt and pepper to taste.

  5. Serve the chicken on top of the rice and garnish with extra herbs and nuts if desired.
