How To Make Lebanese Chicken and Rice Pilaf Recipe

Ingredients

  • 1 lb chicken breast, cut into bite-size pieces
  • 2 tbsp olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tsp allspice
  • 1 tsp cinnamon
  • 1 tsp cumin
  • 1 tsp salt
  • 1 cup basmati rice
  • 1 3/4 cups chicken broth
  • 1/2 cup pine nuts, toasted
  • 1/4 cup parsley, chopped

Instructions

  1. Season chicken with allspice, cinnamon, cumin, and salt.

  2. In a medium pot, heat olive oil over medium heat. Add onion and garlic and cook until softened.

  3. Add chicken and brown for a few minutes.

  4. Add rice and chicken broth and bring to a boil.

  5. Reduce heat to low, cover, and simmer for 25-30 minutes, or until rice is tender and chicken is cooked through.

  6. Fluff rice with a fork and add toasted pine nuts and chopped parsley.
