Serves:

Ingredients

  • 4 boneless chicken breasts
  • 8 ounces rice noodles
  • 1/4 cup soy sauce
  • 2 tablespoons fish sauce
  • 2 tablespoons honey
  • 2 cloves garlic, minced
  • 1 teaspoon grated ginger
  • 1 tablespoon vegetable oil
  • 2 green onions, sliced
  • 1/4 cup chopped cilantro
  • 1/4 cup chopped peanuts
  • 1 lime, cut into wedges

Instructions

  1. Preheat grill to medium-high heat. Season chicken breasts with salt and pepper.

  2. Cook rice noodles according to package instructions. Drain and set aside.

  3. In a small bowl, whisk together soy sauce, fish sauce, honey, garlic, ginger, and vegetable oil.

  4. Grill chicken breasts for 4-5 minutes per side, or until cooked through. Remove from grill and let rest for 5 minutes.

  5. Slice grilled chicken into thin strips.

  6. In a large bowl, toss the cooked rice noodles with the sauce mixture until well coated.

  7. Divide the noodles among 4 plates and top with sliced grilled chicken.

  8. Garnish with green onions, cilantro, chopped peanuts, and lime wedges.

  9. Serve immediately.
