How To Make Sweet Potato Dhal with Curried Vegetables

Ingredients
- 2 cups sweet potatoes, peeled and cubed
- 1 cup red lentils
- 1 onion, diced
- 2 cloves garlic, minced
- 1 tbsp curry powder
- 1 tsp ground turmeric
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 can (400 ml) coconut milk
- 1 cup vegetable broth
- 1 cup mixed vegetables (carrots, peas, bell peppers)
- Salt and pepper, to taste
- Fresh cilantro, for garnish
Instructions

In a large pot, heat some oil over medium heat. Add the diced onion and minced garlic, and sauté until the onion is translucent.

Add the curry powder, turmeric, cumin, and coriander to the pot, and cook for another minute to toast the spices.

Add the sweet potatoes, red lentils, coconut milk, and vegetable broth to the pot. Bring to a boil, then reduce heat and let simmer for about 30 minutes, or until the sweet potatoes and lentils are tender.

In a separate pan, lightly sauté the mixed vegetables until they are slightly tender.

Add the cooked vegetables to the pot with the sweet potato dhal, and season with salt and pepper to taste. Cook for an additional 5 minutes to allow the flavors to blend.

Serve the sweet potato dhal with curried vegetables hot, garnished with fresh cilantro.
