How To Make Sweet Potato Toasts with Curried Chickpeas

Ingredients
- 2 large sweet potatoes, sliced into toasts
- 1 can of chickpeas, rinsed and drained
- 1 tbsp olive oil
- 1 onion, diced
- 2 cloves of garlic, minced
- 1 tbsp curry powder
- 1 tsp cumin
- 1/2 tsp turmeric
- Salt and pepper to taste
- Fresh cilantro, for garnish
Instructions

Preheat oven to 400°F (200°C). Place sweet potato slices on a baking sheet and bake for about 15-20 minutes, until crispy.

In a skillet, heat olive oil over medium heat. Add onion and garlic, and cook until softened.

Add chickpeas, curry powder, cumin, turmeric, salt, and pepper. Cook for 5-7 minutes, until chickpeas are coated in the spices and heated through.

To serve, top each sweet potato toast with a spoonful of the curried chickpeas. Garnish with fresh cilantro.
