Ingredients

  • 2 large sweet potatoes, sliced into toasts
  • 1 can of chickpeas, rinsed and drained
  • 1 tbsp olive oil
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 1 tbsp curry powder
  • 1 tsp cumin
  • 1/2 tsp turmeric
  • Salt and pepper to taste
  • Fresh cilantro, for garnish

Instructions

  1. Preheat oven to 400°F (200°C). Place sweet potato slices on a baking sheet and bake for about 15-20 minutes, until crispy.

  2. In a skillet, heat olive oil over medium heat. Add onion and garlic, and cook until softened.

  3. Add chickpeas, curry powder, cumin, turmeric, salt, and pepper. Cook for 5-7 minutes, until chickpeas are coated in the spices and heated through.

  4. To serve, top each sweet potato toast with a spoonful of the curried chickpeas. Garnish with fresh cilantro.
