- 1/2 teaspoon crushed red pepper flakes
- 2 tablespoons vegetable oil
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 small onion, sliced
- 3 cloves garlic, minced
- 1/4 cup soy sauce
- 1/4 cup sweet chili sauce
- 2 tablespoons hoisin sauce
- 1 tablespoon rice vinegar
- 1 tablespoon sesame oil
- 1/4 cup chopped green onions, for garnish
- 1/4 cup chopped peanuts, for garnish
- 8 oz cooked noodles (such as spaghetti or rice noodles)
Instructions
-
In a bowl, combine the chicken, soy sauce, cornstarch, garlic powder, ginger powder, and crushed red pepper flakes. Mix well and let it marinate for 15 minutes.
-
Heat a large skillet or wok over high heat and add vegetable oil. Add the marinated chicken and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
-
In the same skillet, add the bell peppers, onion, and minced garlic. Stir-fry for 3-4 minutes until the vegetables are tender-crisp.
-
While the vegetables are cooking, prepare the peanut noodles according to the package instructions.
-
In a small bowl, whisk together the soy sauce, sweet chili sauce, hoisin sauce, rice vinegar, and sesame oil.
-
Once the vegetables are cooked, add the cooked chicken back to the skillet and pour the sauce over it. Stir-fry for an additional minute to coat everything evenly.
-
Serve the chili chicken over the peanut noodles. Garnish with chopped green onions and chopped peanuts.
