Serves:
Ingredients
- 4 chicken thighs, bone-in and skin-on
- 1 cup buttermilk
- 1 cup all-purpose flour
- 1 tsp paprika
- 1 tsp garlic powder
- 1 tsp cayenne pepper
- 1 tsp salt
- 1/2 tsp black pepper
- Vegetable oil, for frying
- 4 brioche buns
- Pickles, for serving
Instructions
-
Place the chicken thighs in a bowl and pour the buttermilk over them. Let marinate for at least 1 hour or overnight in the refrigerator.
-
In a shallow dish, mix together the flour, paprika, garlic powder, cayenne pepper, salt, and black pepper.
-
Remove the chicken from the buttermilk and dredge each thigh in the flour mixture, pressing to adhere. Shake off any excess flour.
-
Heat vegetable oil in a large skillet over medium heat. Add the chicken thighs to the skillet and fry until golden brown and cooked through, about 5-7 minutes per side.
-
Remove the chicken from the skillet and place on a paper towel-lined plate to drain excess oil.
-
In a small saucepan, heat 1/4 cup of vegetable oil. Add 2 tbsp of the flour mixture used for dredging and whisk to make a roux. Cook for 2-3 minutes until golden brown.
-
Remove the roux from heat and carefully whisk in 1/4 cup of the hot frying oil to create a hot sauce.
-
Dip each chicken thigh in the hot sauce, coating evenly. Serve on toasted brioche buns with pickles on top.
