Ingredients

  • 4 chicken thighs
  • 1 cup buttermilk
  • 1 tbsp hot sauce
  • 1 tsp salt
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 cup all-purpose flour
  • 1 tsp paprika
  • 1 tsp cayenne pepper
  • 3 cups vegetable oil

Instructions

  1. Make the brine by mixing buttermilk, hot sauce, salt, garlic powder, and onion powder in a bowl. Add chicken thighs, cover with plastic wrap, and refrigerate for at least 2 hours (up to overnight).

  2. In a separate bowl, mix flour, paprika, and cayenne pepper.

  3. Remove chicken from the brine and let excess liquid drip off. Dredge each chicken thigh in the flour mixture, then shake off any excess flour.

  4. In a large skillet, heat vegetable oil to 350°F. Fry chicken thighs for 10-12 minutes, turning occasionally, until golden brown and cooked through.

  5. Transfer the chicken to a cooling rack or paper towels to drain.

  6. Serve hot with your choice of dipping sauces.
