How To Make Chicken Sausage Stuffed Zucchini Boats Recipe
Delicious stuffed zucchini boats, filled with flavorful chicken sausage, cheese, and veggies!

Ingredients
- 2 medium-sized zucchinis
- 4 chicken sausage links, sliced into rounds
- 1 small onion, finely chopped
- 1 bell pepper, finely chopped
- 1 garlic clove, minced
- 1/2 cup shredded mozzarella cheese
- Salt and pepper to taste
- Olive oil for drizzling
Instructions

Preheat oven to 375°F.

Cut zucchinis in half lengthwise and scoop out the seeds and flesh, creating a “boat” shape.

In a skillet, cook chicken sausage rounds until browned, then add onions, bell pepper, and garlic. Cook until veggies are soft.

Stuff zucchini boats with sausage and veggies mixture, then top with shredded cheese.

Drizzle with olive oil and season with salt and pepper.
