Ingredients

  • 4 bone-in chicken thighs
  • 1 tbsp of Cajun seasoning
  • 1 tsp of smoked paprika
  • 1 tsp of garlic powder
  • 1/2 tsp of salt
  • 2 tbsp of olive oil
  • Lemon wedges, for serving

Instructions

  1. Preheat the oven to 400°F.

  2. In a small bowl, mix the Cajun seasoning, smoked paprika, garlic powder, and salt.

  3. Rub the spice mixture all over the chicken thighs.

  4. Heat the olive oil in a cast iron skillet over medium-high heat.

  5. Add the chicken skin-side down and cook for 5-7 minutes until the skin is crispy.

  6. Flip the chicken and transfer the skillet to the oven.

  7. Bake for 20-25 minutes until the chicken is cooked through.

  8. Serve with lemon wedges.
