Ingredients

  • 2 cups leftover porridge
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/4 cup milk
  • 2 eggs
  • 2 tbsp melted butter
  • 1 tsp vanilla extract
  • Maple syrup and fruits for serving

Instructions

  1. In a large mixing bowl, combine leftover porridge, flour, baking powder, and salt.

  2. In a separate bowl, whisk together milk, eggs, melted butter, and vanilla extract.

  3. Gradually pour the wet ingredients into the dry ingredients and stir until just combined.

  4. Heat a non-stick skillet over medium heat and lightly grease with butter or cooking spray.

  5. Pour 1/4 cup of the pancake batter onto the skillet and cook until bubbles form on the surface.

  6. Flip the pancake and cook for another 1-2 minutes, or until golden brown.

  7. Repeat with the remaining batter.
