Ingredients

  • 1 lb beef chuck, cut into small cubes
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 1 can (14 oz) diced tomatoes
  • 1 can (14 oz) kidney beans, drained and rinsed
  • 3 tbsp chili powder
  • 2 tsp ground cumin
  • 1 tsp paprika
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 2 cups beef broth

Instructions

  1. In a large pot, brown the beef over medium-high heat.

  2. Add the onion and garlic and cook until softened.

  3. Stir in the diced tomatoes, kidney beans, chili powder, cumin, paprika, oregano, salt, and beef broth.

  4. Bring to a boil, then reduce heat to low and simmer for 2 hours, stirring occasionally.

  5. Serve hot with your favorite toppings, such as shredded cheese and sour cream.
