How To Make Buckwheat Soup Recipe

Ingredients

  • 1 cup buckwheat groats
  • 4 cups vegetable broth
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 carrot, chopped
  • 1 celery stalk, chopped
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. Rinse buckwheat groats in a strainer and set aside.

  2. In a large pot, sauté onion and garlic until translucent.

  3. Add in carrot and celery and continue to sauté until slightly softened.

  4. Pour in vegetable broth and bring to a boil.

  5. Add in buckwheat groats and dried thyme, reduce heat to medium-low and cover pot with a lid.

  6. Simmer until buckwheat groats are tender, about 30-40 minutes.

  7. Season with salt and pepper to taste.
