  • 1 sheet of pre-made shortcrust pastry
  • 250g new potatoes, thinly sliced
  • 4 spring onions, thinly sliced
  • 100g Montgomery cheddar, grated
  • 4 eggs
  • 200ml milk
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 180°C (350°F).

  2. Roll out the shortcrust pastry and line a 9-inch quiche tin. Trim the edges and prick the base with a fork.

  3. Parboil the sliced new potatoes for 5 minutes, then drain and set aside.

  4. In a bowl, whisk together the eggs and milk. Season with salt and pepper.

  5. Arrange the parboiled potatoes, spring onions, and grated Montgomery cheddar evenly on the pastry base.

  6. Pour the egg and milk mixture over the filling ingredients.

  7. Bake in the preheated oven for 40-45 minutes, or until the quiche is set and golden brown on top.

  8. Allow to cool for a few minutes before slicing and serving.
