Ingredients

  • 3 cup strawberries, sliced
  • 1/4 cup sugar
  • 2 cup Bisquick pancake mix
  • 1 cup milk
  • 2 tbsp sugar
  • 1 tsp vanilla
  • 2 eggs
  • 1 1/2 cup heavy whipping cream, whipped

Instructions

  1. Mix strawberries and 1/4 cup sugar; set aside.

  2. Heat griddle or skillet over medium-high heat or electric griddle to 375 degrees. Grease with cooking spray. (Surface is ready when a few drops of water sprinkled on it dance and disappear.)

  3. In a bowl, combine Bisquick, milk, 2 tablespoons of sugar, vanilla, and eggs. Pour a slightly less than 1/4 cup onto the hot griddle. 

  4. Cook until edges are dry. Flip the pancakes; cook until golden.

  5. To serve, layer pancakes, strawberries and sugar mix, and cream.
