Serves:
Ingredients
- 2 cups all-purpose flour
- 2 tbsp sugar
- 2 tsp baking powder
- 1/2 tsp salt
- 2 cups milk
- 2 eggs
- 2 tbsp melted butter
- 8 slices bacon
- 6 eggs, scrambled
- Fresh fruits (such as berries, sliced bananas, or sliced oranges) for serving
Instructions
-
In a large bowl, whisk together the flour, sugar, baking powder, and salt.
-
In a separate bowl, whisk together the milk, eggs, and melted butter.
-
Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix; the batter will be slightly lumpy.
-
Heat a non-stick skillet or griddle over medium heat and lightly grease with butter or cooking spray.
-
Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, then flip and cook until golden brown on both sides. Repeat with the remaining batter.
-
In a separate pan, cook the bacon until crispy. Remove from the pan and drain on paper towels.
-
In the same pan, scramble the eggs until cooked through.
-
Arrange the cooked pancakes, bacon, scrambled eggs, and fresh fruits on a serving platter.
-
Serve the breakfast pancake platter with maple syrup or honey on the side.
