How To Make Vegan Keto Coconut Curry Recipe
Creamy, flavorful and healthy coconut curry made with vegetables and vegan keto friendly ingredients.
Serves:
Ingredients
- 2 tbsp coconut oil
- 1 large onion, chopped
- 4 garlic cloves, minced
- 2 tbsp fresh ginger, grated
- 1 tsp turmeric powder
- 2 tsp cumin powder
- 1 tsp coriander powder
- 1 small head of cauliflower, cut into florets
- 2 cups baby spinach
- 1 cup coconut milk
- 1 tbsp tamari
- 2 tsp lime juice
- 1 tsp erythritol (optional)
- Salt and pepper, to taste
- Fresh cilantro, for garnish
Instructions

Heat coconut oil in a large pan. Add onion, garlic, ginger and pinch of salt. Cook for 5 minutes until fragrant.

Add turmeric, cumin and coriander. Cook for 1 minute.

Add cauliflower and coconut milk. Stir well.

Cover and cook for 10 minutes until cauliflower is tender.

Stir in spinach, tamari, lime juice, erythritol (if using), salt and pepper. Cook for 2-3 minutes until spinach is wilted.

Garnish with cilantro and serve hot over cauliflower rice or zucchini noodles.
