  • 1 zucchini, diced

Instructions

  1. Heat olive oil in a large non-stick skillet over medium heat.

  2. Add diced zucchini to the skillet and cook for 5-6 minutes until tender.

  3. In a bowl, whisk together the eggs, salt, and black pepper.

  4. Push the zucchini to one side of the skillet and pour the whisked eggs into the other side.

  5. Let the eggs cook undisturbed for a minute, then gently scramble them with a spatula.

  6. Continue cooking and scrambling the eggs until they are fully cooked but still moist.

  7. Remove the skillet from heat and let the residual heat finish cooking the eggs.

  8. Serve the scrambled eggs with sautéed zucchini hot with optional toppings of grated cheese and chopped herbs.
