How To Make Potato Salad with Anchovy & Quail’s Eggs

Ingredients
- 4 medium-sized potatoes, cooked and diced
- 4 quail’s eggs, hard-boiled and halved
- 4 anchovy fillets, chopped
- 1/4 cup mayonnaise
- 1 tablespoon dijon mustard
- 1 tablespoon lemon juice
- Salt and pepper to taste
- Chopped fresh parsley for garnish
Instructions

In a large bowl, combine diced potatoes, halved quail’s eggs, and chopped anchovy fillets.

In a separate small bowl, mix together mayonnaise, dijon mustard, lemon juice, salt, and pepper.

Pour the dressing over the potato mixture and gently toss until everything is well coated.
