Ingredients

  • 4 medium-sized potatoes, cooked and diced
  • 4 quail’s eggs, hard-boiled and halved
  • 4 anchovy fillets, chopped
  • 1/4 cup mayonnaise
  • 1 tablespoon dijon mustard
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish

Instructions

  1. In a large bowl, combine diced potatoes, halved quail’s eggs, and chopped anchovy fillets.

  2. In a separate small bowl, mix together mayonnaise, dijon mustard, lemon juice, salt, and pepper.

  3. Pour the dressing over the potato mixture and gently toss until everything is well coated.

  4. Garnish with chopped fresh parsley.

  5. Serve chilled and enjoy!
