  • 8 large eggs
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cup fresh basil leaves, chopped
  • 1/2 cup mozzarella cheese, shredded
  • Salt and pepper to taste
  • Olive oil cooking spray

Instructions

  1. Preheat oven to 375°F.

  2. Lightly spray a muffin tin with olive oil cooking spray.

  3. Crack two eggs into each muffin cup.

  4. Season with salt and pepper to taste.

  5. Top each egg cup with cherry tomatoes, fresh basil, and shredded mozzarella cheese.
