  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • 1/2 cup dried cranberries (optional)
  • 1 tablespoon milk (for brushing)
  • 1 tablespoon granulated sugar (for sprinkling)

Instructions

  1. Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.

  2. In a large bowl, whisk together the flour, sugar, baking powder, and salt.

  3. Add the cold cubed butter to the flour mixture. Use a pastry cutter or your fingertips to cut the butter into the flour until the mixture resembles coarse crumbs.

  4. In a separate small bowl, whisk together the milk and vanilla extract. Gradually pour the milk mixture into the flour and butter mixture, stirring until just combined. If desired, gently fold in the dried cranberries.

  5. Transfer the dough onto a lightly floured surface and gently knead it a few times until it comes together. Be careful not to overwork the dough.

  6. Pat the dough into a 1-inch thick round. Use a sharp knife or a round biscuit cutter to cut out scones from the dough.

  7. Place the scones onto the prepared baking sheet, leaving about 2 inches of space between each scone. Brush the tops of the scones with milk and sprinkle with granulated sugar.

  8. Bake for 12-15 minutes, or until the scones are golden brown and cooked through.

  9. Remove from the oven and let the scones cool on a wire rack before serving.
