Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup shredded coconut
  • 1/2 cup crushed pineapple, drained
  • 1/3 cup vegetable oil
  • 2 eggs

Instructions

  1. Preheat oven to 350°F. Grease a 9×5 inch loaf pan.

  2. In a large bowl, whisk together flour, sugar, baking powder, and salt.

  3. Stir in shredded coconut and crushed pineapple.

  4. In a separate bowl, beat together vegetable oil and eggs.

  5. Add wet ingredients to dry ingredients and mix until just combined.

  6. Pour batter into prepared pan and bake for 50 minutes or until golden brown.

  7. Let cool before serving.
