Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/3 cup sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup orange juice
  • 1/4 cup vegetable oil
  • 2 teaspoons orange zest
  • 1 egg
  • 1 cup fresh or frozen cranberries

Instructions

  1. Preheat oven to 350°F.

  2. In a large mixing bowl, combine flour, sugar, baking powder, baking soda, and salt.

  3. In a separate mixing bowl, whisk together orange juice, vegetable oil, orange zest, and egg.

  4. Pour the wet ingredients over the dry ingredients and mix until just combined.

  5. Fold in the cranberries.

  6. Pour the batter into a greased loaf pan.

  7. Bake for 55-60 minutes or until a toothpick inserted in the center comes out clean.

  8. Cool for 10 minutes before removing from the pan.

  9. Cool completely on a wire rack before slicing and serving.
