Ingredients

  • 2 1/4 cups all-purpose flour
  • 1 tsp instant yeast
  • 1 tsp salt
  • 1/2 tsp sugar
  • 1 cup warm water
  • 2 tbsp olive oil
  • 1/4 cup olives, sliced
  • 1 tbsp fresh rosemary, chopped
  • Sea salt, for sprinkling

Instructions

  1. In a large bowl, combine flour, yeast, salt, and sugar. Mix well.

  2. Slowly add warm water and olive oil to the dry ingredients. Mix until a dough forms.

  3. Knead the dough for 5-7 minutes, until it becomes smooth and elastic.

  4. Place the dough in a greased bowl and cover with a damp cloth. Let it rise for 1 hour.

  5. Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.

  6. Punch down the dough and transfer it to the prepared baking sheet. Shape it into a large oval.

  7. Using a sharp knife, make 3-4 diagonal slashes on each side of the dough, resembling a leaf pattern.

  8. Gently stretch the dough in between the slashes to open up the cuts.

  9. Sprinkle olives and rosemary over the dough, pressing them in lightly.

  10. Brush the top of the dough with olive oil and sprinkle with sea salt.

  11. Bake for 15 minutes, or until the fougasse is golden brown and crispy.

  12. Remove from the oven and let it cool for a few minutes before serving.
