Ingredients

  • 2 cups all-purpose flour
  • 1 tsp instant yeast
  • 1 tsp sugar
  • 1 tsp salt
  • 2 tbsp olive oil
  • 1/2 cup warm water
  • 1 tbsp chopped fresh rosemary
  • 1 tbsp chopped fresh thyme
  • Extra olive oil, for brushing
  • Coarse sea salt, for sprinkling

Instructions

  1. In a large bowl, combine flour, instant yeast, sugar, and salt. Add olive oil and warm water. Mix until a dough forms.

  2. Knead the dough on a floured surface for about 5 minutes, until smooth and elastic.

  3. Place the dough in a greased bowl, cover with a kitchen towel, and let it rise for about 1 hour, or until doubled in size.

  4. Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.

  5. Punch down the dough and transfer it to the prepared baking sheet. Shape the dough into a rectangle, about 1/2 inch thick.

  6. Using a sharp knife, make diagonal slashes on the dough to create a leaf-like pattern. Sprinkle with fresh rosemary, thyme, and coarse sea salt.

  7. Bake in the preheated oven for 15 minutes, or until golden brown and crispy.

  8. Remove from the oven and brush with olive oil. Let it cool for a few minutes before serving.
