Ingredients

  • 2 cups all-purpose flour
  • 1 tbsp sugar
  • 1 tsp salt
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 cup milk
  • 2 tbsp butter, melted
  • Cornmeal (for dusting)

Instructions

  1. In a large bowl, combine the flour, sugar, salt, baking powder, and baking soda.

  2. In a separate bowl, mix together the milk and melted butter. Pour the wet ingredients into the dry ingredients and stir until a sticky dough forms.

  3. Turn the dough out onto a floured surface and knead for about 5 minutes, until smooth and elastic. Add more flour if needed.

  4. Divide the dough into 4 equal portions and shape them into rounds. Place the rounds on a baking sheet dusted with cornmeal. Cover with a clean kitchen towel and let rise for 15 minutes.

  5. Heat a griddle or non-stick skillet over medium-low heat. Cook the muffins for about 5 minutes on each side, until golden brown and cooked through.

  6. Transfer the muffins to a wire rack to cool. Split them open with a fork or serrated knife and toast before serving.
