How To Make Downeast Maine Pumpkin Bread

- 2 eggs
- 1 cup canned pumpkin puree
- 1/2 cup vegetable oil
- 1/4 cup water
- 1 1/2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground cloves
Instructions

Preheat the oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan.

In a large mixing bowl, whisk together the eggs, pumpkin puree, oil, and water until well combined.

In a separate bowl, combine the flour, sugar, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves.

Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Do not overmix.

Pour the batter into the prepared loaf pan and smooth the top with a spatula.

Bake in the preheated oven for 60 minutes, or until a toothpick inserted into the center comes out clean.

Remove the pumpkin bread from the oven and let it cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
