Serves:
Ingredients
- 1 3/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground cloves
- 1/4 teaspoon ground ginger
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 2 large eggs
- 1 cup canned pumpkin puree
- 1/2 cup buttermilk
- 1 teaspoon vanilla extract
Instructions
-
Preheat the oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
-
In a medium bowl, whisk together the flour, baking soda, salt, cinnamon, nutmeg, cloves, and ginger. Set aside.
-
In a large bowl, cream together the butter and sugars until light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in the pumpkin puree.
-
Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk. Mix until just combined. Stir in the vanilla extract.
-
Pour the batter into the prepared loaf pan and smooth the top. Bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean.
-
Remove from the oven and let cool in the pan for 10 minutes. Remove from the pan and transfer to a wire rack to cool completely.
