  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup grated courgette
  • 1 cup grated cheddar cheese
  • 1/2 cup milk
  • 1/4 cup vegetable oil
  • 2 eggs

Instructions

  1. Preheat the oven to 200°C (400°F) and grease a rectangular baking dish.

  2. In a large bowl, mix together the cornmeal, flour, baking powder, baking soda, salt, and black pepper.

  3. In a separate bowl, whisk together the grated courgette, grated cheddar cheese, milk, vegetable oil, and eggs.

  4. Pour the wet ingredients into the dry ingredients and stir until just combined.

  5. Pour the batter into the greased baking dish and spread it out evenly.

  6. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.

  7. Allow the cornbread to cool for a few minutes before cutting into squares.

  8. Serve warm as a side dish or snack.
