How To Make Courgette & Cheddar Soda Bread

- 2 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1 cup grated courgette (zucchini)
- 1 cup grated cheddar cheese
- 1 tbsp chopped fresh herbs (such as basil or parsley)
- 1 cup buttermilk
Instructions

Preheat the oven to 375°F (190°C). Grease a baking sheet or line it with parchment paper.

In a large bowl, whisk together the flour, baking soda, and salt.

Add the grated courgette, cheddar cheese, and chopped herbs to the bowl. Mix well to combine.

Pour in the buttermilk and stir until a sticky dough forms.

Turn the dough onto a floured surface and knead lightly for about 1 minute.

Shape the dough into a round loaf and place it onto the prepared baking sheet.

Use a sharp knife to score a cross into the top of the loaf.

Bake for 35-40 minutes, or until the bread is golden brown and sounds hollow when tapped on the bottom.
