Ingredients

  • 1 cup grated courgette
  • 1 cup grated potato
  • 1 cup shredded cheddar cheese
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried oregano
  • 2 eggs
  • 1/4 cup milk
  • 1/4 cup vegetable oil

Instructions

  1. Preheat the oven to 350°F (180°C). Grease a loaf pan and set aside.

  2. In a large bowl, combine the grated courgette, grated potato, shredded cheddar cheese, all-purpose flour, baking powder, baking soda, salt, black pepper, and dried oregano.

  3. In a separate bowl, whisk together the eggs, milk, and vegetable oil. Pour the wet ingredients into the dry ingredients and mix until well combined.

  4. Pour the batter into the prepared loaf pan and smooth the top with a spatula.

  5. Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.

  6. Remove from the oven and let cool in the pan for 10 minutes. Then transfer to a wire rack to cool completely before slicing.

  7. Serve the courgette, potato & cheddar bread sliced and enjoy!
