Ingredients
- 4 courgettes
- 1 cup of grated cheese (cheddar or mozzarella)
- 1/4 cup of breadcrumbs
- 1/4 cup of grated Parmesan cheese
- 2 cloves of garlic, minced
- 2 tablespoons of olive oil
- Salt and pepper to taste
Instructions

Preheat your grill to medium-high heat.

Cut the courgettes in half lengthwise and scoop out the seeds using a spoon.

In a bowl, mix together the grated cheese, breadcrumbs, Parmesan cheese, minced garlic, olive oil, salt, and pepper.

Stuff each courgette half with the cheese mixture until fully filled.

Place the stuffed courgettes on a grill pan and place under the grill for about 15-20 minutes, or until the cheese has melted and the courgettes are tender.

Remove from the grill and let them cool for a few minutes before serving.
