  • 4 cups spinach leaves
  • 1 large onion, thinly sliced
  • 2 tablespoons olive oil
  • 1/4 cup pine nuts
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. In a large skillet, heat the olive oil over medium heat.

  2. Add the sliced onion and cook until soft and caramelized, about 8-10 minutes.

  3. Add the minced garlic and cook for another 1-2 minutes.

  4. Stir in the pine nuts and cook until lightly toasted, about 2 minutes.

  5. Add the spinach leaves to the skillet and cook until wilted, about 3-4 minutes.

  6. Season with salt and black pepper, to taste.

  7. Remove from heat and serve hot.
