Ingredients

  • 1 small head of cauliflower, cut into florets
  • 1 cup shredded cheddar cheese
  • 2 eggs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup almond flour
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.

  2. Steam the cauliflower florets until they are tender, about 7-8 minutes. Drain and let cool for a few minutes.

  3. In a large bowl, combine the steamed cauliflower, cheddar cheese, eggs, Parmesan cheese, almond flour, garlic powder, onion powder, salt, and pepper. Mix well until everything is evenly combined.

  4. Take about 2 tablespoons of the cauliflower mixture and shape it into a small roll. Place it on the prepared baking sheet. Repeat with the remaining mixture.

  5. Bake in the preheated oven for 20-25 minutes, or until the cauliflower rolls are golden brown and crispy.

  6. Remove from the oven and let cool for a few minutes before serving.
