  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1/4 cup melted butter
  • 1 cup milk
  • 2 eggs
  • 1 cup chopped broccoli
  • 1 cup shredded cheddar cheese

Instructions

  1. Preheat the oven to 375°F (190°C) and grease a 9-inch square baking dish.

  2. In a large bowl, combine the cornmeal, flour, baking powder, and salt.

  3. In a separate bowl, mix together the melted butter, milk, and eggs.

  4. Pour the wet ingredients into the dry ingredients and stir until just combined.

  5. Fold in the chopped broccoli and shredded cheddar cheese.

  6. Spread the batter evenly into the prepared baking dish.

  7. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
