Ingredients

  • 1 lb shaved beef
  • 1 cup fresh parsley
  • 1/2 cup fresh cilantro
  • 3 garlic cloves
  • 1 shallot
  • 1/4 cup red wine vinegar
  • 1/2 cup olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat a large skillet over high heat.

  2. Season the shaved beef with salt and pepper and add to the hot skillet. Cook for 2-3 minutes until browned and cooked through.

  3. In a food processor, combine parsley, cilantro, garlic, shallot, red wine vinegar, olive oil, salt, and pepper. Blend until smooth.

  4. Serve the shaved beef with the chimichurri sauce on top.
