How To Make Steak Kebabs with Chimichurri

Ingredients

  • lbsbeef,sirloin or Angus, cut into 1-inch cubes
  • pepper,fresh ground
  • tspkosher salt
  • 1large red onion,cut into chunks
  • 18cherry tomatoes

For Chimichurri Sauce:

  • 2tbspparsley,finely chopped, no stems
  • 2tbspcilantro,packed, chopped
  • 2tbspred onion,finely chopped
  • 1garlic clove,minced
  • 2tbspextra virgin olive oil
  • 2tbspapple cider vinegar
  • 1tbspwater
  • ¼tspkosher salt
  • tspfresh black pepper
  • tspred pepper flakes,crushed, or more to taste

Instructions

  1. Season the meat with salt and pepper.

  2. For the chimichurri, combine the red onion, vinegar, salt, and olive oil and let it sit for about 5 minutes. Add the remaining ingredients and mix. Set aside in the refrigerator until ready to use.

  3. Place the onions, beef, and tomatoes onto the skewers.

  4. Prepare the grill on high heat. Grill the steaks to the desired doneness for about 2 to 3 minutes per side for medium-rare.

  5. Transfer steaks to a platter and top with chimichurri sauce.
