Ingredients

  • 3 lbs beef short ribs
  • 1 tbsp olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 cup beef broth
  • 1/4 cup soy sauce
  • 2 tbsp Worcestershire sauce
  • 2 tbsp brown sugar
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and pepper to taste
  • For Herb Salad:
  • 4 cups mixed greens
  • 1 cup fresh herbs (such as parsley, cilantro, and mint), chopped
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, thinly sliced
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • Salt and pepper to taste

Instructions

  1. Season the short ribs with salt and pepper. Select the “Saute” function on the pressure cooker and heat the olive oil. Brown the short ribs on all sides, then remove from the pressure cooker.

  2. Add the chopped onion and minced garlic to the pressure cooker and sauté until fragrant. Add the beef broth, soy sauce, Worcestershire sauce, brown sugar, dried thyme, and dried rosemary. Stir well.

  3. Return the short ribs to the pressure cooker. Close the lid and cook on high pressure for 60 minutes. Allow the pressure to naturally release for 15 minutes, then carefully release any remaining pressure.

  4. While the short ribs are cooking, prepare the herb salad. In a large bowl, combine the mixed greens, fresh herbs, cherry tomatoes, and red onion. In a separate small bowl, whisk together the olive oil, lemon juice, salt, and pepper. Drizzle the dressing over the salad and toss to coat.

  5. Once the pressure has released from the cooker, open the lid and remove the short ribs. Serve them with the herb salad on the side.
