Ingredients

  • 4 large carrots, peeled and diced
  • 4 ripe tomatoes, diced
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 2 cups vegetable broth
  • 1 tsp dried basil
  • 1/2 tsp dried thyme
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the onion and garlic and sauté until fragrant and golden brown.

  2. Add the carrots and tomatoes to the pot and cook for 5 minutes, stirring occasionally.

  3. Pour in the vegetable broth and bring to a boil. Reduce heat to low and simmer for 20 minutes, or until the carrots are tender.

  4. Using a blender or immersion blender, puree the soup until smooth and creamy.

  5. Stir in the dried basil and thyme. Season with salt and pepper to taste.

  6. Serve hot and garnish with fresh basil leaves, if desired.
