How To Make Beef and Mushroom Casserole Recipe

Ingredients
- 1 lb. beef chuck roast, trimmed and cubed
- 1 tbsp. olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 8 oz. mushrooms, sliced
- 1 tbsp. tomato paste
- 1 tbsp. Worcestershire sauce
- 1 tsp. dried thyme
- 1 tsp. dried rosemary
- 1/2 tsp. salt
- 1/4 tsp. black pepper
- 1 cup beef broth
- 2 tbsp. cornstarch
- 2 tbsp. cold water
Instructions

Preheat the oven to 325°F.

In an oven-safe casserole dish, heat the olive oil over medium-high heat.

Add the beef cubes and brown on all sides, about 5-7 minutes.

Add the chopped onions, garlic, and mushrooms, and cook until softened, about 5 minutes.

Stir in the tomato paste, Worcestershire sauce, thyme, rosemary, salt, and pepper. Cook for another minute.

Pour in the beef broth and bring to a simmer, stirring occasionally.

Cover the dish with a lid or aluminum foil and bake in the preheated oven for 1 1/2 to 2 hours, or until the beef is tender.

In a small bowl, whisk together the cornstarch and cold water until smooth.

Remove the casserole dish from the oven and stir in the cornstarch mixture. Return to the oven and bake, uncovered, for an additional 10-15 minutes, until the sauce has thickened.
