Ingredients

  • 1 lb ground beef
  • 1/2 cup BBQ sauce
  • 4 cups thinly sliced potatoes
  • 1 cup diced onion
  • 1 cup shredded cheddar cheese
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Preheat oven to 375°F.

  2. Heat a large skillet over medium-high heat. Add the ground beef and cook until browned.

  3. Add the diced onion to the skillet and cook until translucent.

  4. Stir in the BBQ sauce and garlic powder and cook for an additional 2-3 minutes.

  5. In a 9×13 inch baking dish, layer the thinly sliced potatoes, followed by the beef mixture.

  6. Repeat layers, ending with a layer of potatoes on top.

  7. Drizzle olive oil over the potatoes and season the top layer with salt and pepper.

  8. Cover the dish with aluminum foil and bake for 45 minutes.

  9. Remove the foil and sprinkle shredded cheese over the potatoes.

  10. Return to the oven and bake, uncovered, for an additional 15-20 minutes or until the cheese is melted and bubbly.

  11. Let cool for 5-10 minutes before serving.
