How To Make BBQ Chicken Quinoa Casserole

This quinoa casserole is rich in fiber and full of flavor. It has shredded chicken smothered in barbecue sauce, plus loads of beans and cheese.

  • 3cupsquinoa,cooked,
  • 2cupscheese,Colby Jack, shredded, 8 ounces, divided
  • 2cupschicken,cooked, shredded
  • 15ozblack beans,1 can, rinsed and drained
  • 1cupcorn,whole-kernel, canned or frozen, then thawed
  • cupsBBQ Sauce,plus extra for drizzling on top
  • cilantro,onions, avocado, sour cream, as optional garnishes


  1. Preheat oven to 375 degrees F.

  2. In a large bowl or baking dish, stir together quinoa, 1½ cups cheese, chicken, black beans, corn and bbq sauce until combined.  

  3. Transfer the quinoa mixture to a baking dish and sprinkle the remaining cheese evenly on top.

  4. Bake for 15 to 20 minutes, or until the cheese is melted and the casserole is warmed through. Remove from the oven, and drizzle the top of the casserole with a little extra bbq sauce, and top with desired (optional) garnishes.

  5. Serve immediately.
