Ingredients

  • 2 cans cannellini beans, drained and rinsed
  • 1 red onion, chopped
  • 1 red bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/4 cup vegetable broth
  • 1/2 cup shredded mozzarella cheese
  • Salt and pepper, to taste

Instructions

  1. Preheat oven to 375°F (190°C).

  2. In a large skillet, sauté onion, bell pepper, and garlic over medium-high heat until softened, about 5 minutes.

  3. Add in cannellini beans, oregano, basil, vegetable broth, salt, and pepper. Cook until heated through.

  4. Transfer the mixture to a casserole dish and sprinkle shredded mozzarella cheese over the top.

  5. Bake for 20-25 minutes, until the cheese is bubbly and golden brown.

  6. Serve hot and enjoy!
