How To Make Fava Bean Dip

A smooth and creamy dip made with fresh fava beans and herbs.

Ingredients

  • 2 cups fresh fava beans, shelled
  • 2 cloves garlic, chopped
  • 1/4 cup fresh parsley leaves
  • 1/4 cup fresh mint leaves
  • 2 tablespoons lemon juice
  • 1/4 cup olive oil
  • Salt and pepper, to taste

Instructions

  1. Bring a small pot of salted water to a boil. Add the fava beans and cook for 3-4 minutes, until tender. Drain and set aside.

  2. In a food processor, combine the garlic, parsley, mint, and lemon juice. Process until finely chopped.

  3. Add the cooked fava beans and olive oil to the food processor. Process until smooth and creamy.

  4. Season with salt and pepper to taste.

  5. Serve with pita chips or fresh veggies.
