- 8 large spinach leaves
- 1 cup ricotta cheese
- 1/4 cup grated Parmesan cheese
- 1/4 cup chopped sun-dried tomatoes
- 1/4 cup chopped black olives
- 1/4 teaspoon garlic powder
- Salt and pepper to taste
Instructions

Preheat the oven to 375°F (190°C).

In a medium bowl, mix together the ricotta cheese, Parmesan cheese, sun-dried tomatoes, black olives, garlic powder, salt, and pepper.

Lay out the spinach leaves on a clean surface.

Spread a thin layer of the cheese mixture on each spinach leaf.

Roll up the spinach leaves tightly and secure with toothpicks if needed.
