Ingredients

  • 1 cup Arborio rice
  • 4 cups vegetable broth
  • 1 small onion, finely chopped
  • 2 cloves of garlic, minced
  • 1 head of broccoli, cut into small florets
  • 1/2 cup heavy cream
  • Zest of 1 lemon
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large saucepan, heat the vegetable broth over medium heat and keep it warm.

  2. In a separate large skillet, heat some olive oil over medium heat. Add the onion and garlic and sauté until softened, about 5 minutes.

  3. Add the Arborio rice to the skillet and stir until coated with the onion and garlic mixture.

  4. Begin adding the warm vegetable broth to the skillet, about 1 cup at a time, stirring constantly and allowing each addition to be absorbed before adding more.

  5. After about 15 minutes of adding broth and stirring, add the broccoli florets to the skillet and continue adding broth until the rice is cooked through and the broccoli is tender, about 5-10 more minutes.

  6. Stir in the heavy cream, lemon zest, and Parmesan cheese. Season with salt and pepper to taste.

  7. Serve the risotto hot, garnished with fresh parsley.
