  • 4 boneless, skinless chicken breasts
  • 1 cup cooked rice
  • 1/2 cup diced bell peppers
  • 1/2 cup diced onions
  • 1/2 cup shredded cheddar cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).

  2. Butterfly each chicken breast by cutting horizontally through the middle, without cutting all the way through. Open the chicken breasts like a book.

  3. Season the chicken breasts with salt, pepper, garlic powder, and paprika.

  4. In a bowl, combine the cooked rice, diced bell peppers, diced onions, and shredded cheddar cheese.

  5. Spoon the rice mixture onto each chicken breast, then roll them up tightly.

  6. Secure the roll-ups with toothpicks if needed.

  7. In an oven-safe skillet or baking dish, heat olive oil over medium heat.

  8. Place the chicken roll-ups in the skillet, seam side down, and cook for 3-4 minutes on each side until golden brown.

  9. Transfer the skillet to the preheated oven and bake for 15-20 minutes until the chicken is cooked through.

  10. Remove from the oven and let cool for a few minutes.

  11. Serve the chicken roll-ups hot, and remove the toothpicks before serving.
