  • 2 cans of chickpeas, drained and rinsed
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons chopped fresh parsley

Instructions

  1. In a large bowl, whisk together the olive oil, lemon juice, garlic, cumin, paprika, salt, and pepper.

  2. Add the chickpeas to the bowl and toss to coat them in the marinade.

  3. Let the chickpeas marinate for at least 30 minutes, stirring occasionally.

  4. Sprinkle with fresh parsley before serving.
