How To Make Roasted Chickpea Wraps
A delicious and healthy wrap filled with roasted chickpeas, vegetables, and a flavorful sauce.

Ingredients
- 2 cans of chickpeas, drained and rinsed
- 2 tablespoons olive oil
- 1 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon cumin
- Salt and pepper to taste
- 4 whole wheat wraps
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/2 red onion, thinly sliced
- 1/4 cup fresh parsley, chopped
- 1/4 cup tahini
- Juice of 1 lemon
- 2 tablespoons water
Instructions

Preheat oven to 400°F (200°C).

In a large mixing bowl, toss the chickpeas with olive oil, paprika, garlic powder, cumin, salt, and pepper.

Spread the seasoned chickpeas on a baking sheet and roast in the preheated oven for 25-30 minutes, or until crispy and golden.

While the chickpeas are roasting, prepare the sauce by whisking together tahini, lemon juice, water, salt, and pepper in a small bowl.

Warm the whole wheat wraps in a skillet or microwave.

Once the chickpeas are done, assemble the wraps by dividing the roasted chickpeas, cherry tomatoes, cucumber, red onion, and parsley among the wraps.

Drizzle the tahini sauce over the ingredients in each wrap.

Fold the wraps tightly and serve.
